1. Introduction
The foodstuff processing industry based on olive oil extraction constitutes a large part of agro-industrial activities and is an economically important activity for many Mediterranean regions. However, this process results in seasonal large quantities of biorecalcitrant wastewaters, that come from the vegetation water and the soft tissues of the olive fruits mixed with the water used in the different stages of oil production. All these wastewaters together with the industry wash-waters, make up the so-called olive mill wastewaters (OMW). The main environmental impacts of OMW derive from its high organic (COD values range between 45 and 170 g/L) and polyphenolic content (0.5e24 g/L) that result in high ecotoxicity and strong antibacterial action (Chatzisymeon et al., 2009a; 2009b). The presence of these biorecalcitrant organic compounds together with the seasonal production of large OMW quantities (about 4$105 m3 /y in Greece) constitute the major obstacles in the efficient effluent management.
1.مقدمه
صنعت فرآورى مواد غذایى بر پایه استخراج روغن زیتون، به عنوان بخش بزرگى از فعالیت هاى صنعتى در نظر گرفته مى شود و یکى از فعالیت هاى اقتصادى مهم براى مناطق مدیترانه اى است. به هر حال، این فرآیند ها منجر به تولید مقادیر زیادى از فاضلاب هاى فصلى سر سختی از نظر زیستى مى شوند که از آب چرخه رشد گیاه و بافت نرم میوه زیتون ترکیب شده با آب مورد استفاده در مراحل مختلف تولید روغن حاصل مى شود. همه این فاضلاب ها به همراه پساب هاى صنعتى آب شستشو، به اصطلاح فاضلاب زیتون خرد شده (OMW) را تشکیل مى دهند. اثرات زیست محیطى اصلى OMW از مقدار بالاى مواد آلی ( مقدار COD در محدوده 45 و 70 g/l) و محتواى پلى فنولى ( 0.5-24 g/L) حاصل مى شوند که موجب سمیّت زیاد و فعالیت آنتى باکتریال قوى مى شود.( Chatzisymeon etal 2009) حضور این ارگانیک هاى سر سخت زیستى به همراه مقادیر زیاد تولیدات فصلى OMW در حدود m3/y 105 ×4، موانع عمده در مدیریت کارآمد پساب را تشکیل مى دهند.
